FADS1 encodes delta-5 desaturase, a rate-limiting enzyme in the pathway that converts dietary essential fatty acids into long-chain polyunsaturated fatty acids, introducing double bonds in the conversion of plant-derived alpha-linolenic acid (ALA) toward the omega-3 fats EPA and DHA and of linoleic acid toward arachidonic acid. Common variants at this locus, including rs174537, rs174546, and rs174547, strongly influence how efficiently an individual converts ALA into EPA/DHA, affecting circulating and tissue omega-3 and omega-6 fatty acid levels.
